Ho trovato questa ricetta che secondo me può tranquillamente sostituire il pane, è sfiziosa e fatta con farina integrale, ovviamente facilissima da fare e a parte per il tempo di lievitazione è anche abbastanza veloce.
500 gr di farina integrale
4 cucchiai d'olio extravergine di oliva
1 cucchiaio di sale fino
1 bustina di lievito secco
280 ml di acqua tiepida
semi vari, di sesamo, di girasole...
q.b. sale grosso, rosmarino
Normalmente per questa ricetta io mi servo della mia amica impastatrice, ma dato che non tutti ce l'hanno questa volta l'ho fatta con un semplice robot da cucina, il risultato non cambia!
Inserire nel contenitore la farina, il lievito secco, l'olio, i semi e iniziare a mescolare aggiungendo l'acqua tiepida poca per volta, una volta creato l'impasto aggiungere il sale e finire di impastare, il robot deve andare per almeno 8/10 minuti a velocità media.
Una volta creato l'impasto, deve lievitare in un luogo tiepido e lontano da correnti d'aria per almeno 1h. Io solitamente metto il contenitore, preferibilmente in vetro, dentro al forno coperto con un canovaccio, io la copro con della pellicola.
Una volta che l'impasto ha lievitato rivestire con carta da forno 2 teglie da forno, dividere l'impasto in due e stenderlo sulle teglie con le mani oliate (anche perché se no avrete l'impasto sulle mani in eterno!), ricoprire nuovamente e far lievitare in teglia per 2 ore.
Spargere le Schiacciate con sale grosso e rosmarino a piacere, spennellare la superficie con un composto di acqua e olio, infornare a 220° per 10/15 minuti.
Una volta raffreddata io la taglio e poi ne congelo la metà.
E' ottima da sostituire al pane ma anche come piatto unico, si può farcire a piacimento, ma le mie preferite sono con squacquerone rucola e prosciutto crudo, oppure con fontina speck e radicchio!!
